Frito(less) Pie

Frito pie is a staple in any redneck's diet. If you've never had it, it consists of a pile of Frito's corn chips topped with chili, cheddar cheese and sour cream. It is freaking awesome. It's also unbelievably fattening.

I use iceburg lettuce in place of the frito's for the crunchy bottom layer. Just to be totally clear - it's not as good. It's not even frito pie anymore, it's just chili salad. The saddest part is the omission of the cheese. If you are a responsible adult who is capable of using a small amount of grated cheddar then by all means do so. It's only a little over 100 calories per ounce (an ounce isn't much) so that's not terrible, but if you're like me and knowing that cheese is in the house turns you into a ravenous feeding machine, don't buy it at all.
I still put sour cream on it because otherwise I fear I might lose the will to live.

The chili is just plain ole chili (but without the beans). Make it flavorful with several different kinds of hot peppers and you honestly don't miss the beans.

Seriously, although I bitch and moan about the loss of the chips and cheese, this version is really very good. Try it.
